Leftover Halloween Candy Cookies

1 stick unsalted butter, room temperature

2 ounces sugar

6 ounces light brown sugar

1 egg

½ teaspoon vanilla

8 ounces all purpose flour

½ teaspoon salt

¾ teaspoon baking soda

1 cup chopped Halloween candy


In the bowl of your electric mixer fitted with the paddle attachment place 1 stick of room temperature, unsalted butter along with 2 ounces {1/4 cup} white sugar and 6 ounces {3/4 cup} light brown sugar. Beat until light and fluffy.

Add in 1 egg and 1/2 teaspoon of vanilla. Mix until combined.

In a separate bowl measure out 8 ounces {1 cup) of all purpose flour, 1/2 teaspoon of salt and 3/4 teaspoon of baking soda. Mix into the butter/sugar mixture on slow speed, until just combined.

Finally, chop up 1 cup your favorite leftover Halloween candy and fold it into the mixture.

Spoon or scoop 1 tablespoon size balls onto a cookie sheet fitted with a Silpat mat or parchment paper.

Bake at 360 degrees until cookies are lightly golden. Allow to cool and enjoy!
