Foolproof Guacamole

Can I admit something to you? I am not the best cook in the world. Nor am I a great baker like my sister {Little Miss Cakery….}. But there are a few recipes that I have perfected in my repertoire. So I continue to make them over and over again, impressing and fooling friends into believing that I am a good cook. Joke is on them.

You need to make this guacamole. It is easy. It is delicious. And it is foolproof. Perfect for upcoming Cinco de Mayo {with one margarita, or eight}.

4 ripe Haas avocados
juice of 1 lemon
8 dashes tabasco sauce
1 small red onion diced
1 large garlic clove, minced
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 medium tomato, seeded, and small-diced

optional: chopped cilantro

Cut the avocados in half, remove the pits, and scoop the flesh out of their shells into a large bowl. To get rid of the pit I forcefully but carefully tap my knife into it and then twist.

Immediately add lemon juice, tabasco, onion, garlic, salt, and pepper and toss well.

Using a sharp knife, “chop” the ingredients in the bowl until the avocado is a chunky bite sized consistency mixed with the rest of the ingredients. Add the tomatoes. Add cilantro {I love but some people don’t}. Mix with a spoon and taste for salt and pepper.

Serve in a molcajete {which makes it seem super authentic}.
