Cakery Friday: Nutella Cupcakes

Remember that decadent homemade Nutella I taught you how to make last week? Well I decided to put it to good use! Add some of that sweetness to the icing on these cupcakes and you’ve got yourself… well, pretty much  the best cupcakes around. Ever. Actually a friend of ours did say that they were “the best cupcakes she has ever eaten.” Bold statement because we are constantly plying our friends with flour, sugar and butter.







Gather all of the ingredients.







In the bowl of your electric mixer fitted with the paddle attachment sift together 3/4 cup all-purpose flour, 3/4 cup white sugar, 1/4 cup dark cocoa powder, 3/4 teaspoon baking soda, 3/4 teaspoon baking powder, 3/4 teaspoon cornstarch and 1/2 teaspoon salt. Mix on low speed for 20 seconds to combine.







Add in 1/3 cup buttermilk, 1/4 cup brewed coffee {or espresso} that is still hot, 3 tablespoons vegetable oil, 1 egg and 1 1/2 teaspoons vanilla extract. Mix for 2 minutes at medium speed, stopping half way through to scrape down the sides of the bowl.







Fill baking cups 2/3 full ~ the batter will be very fluid and the cupcakes will rise a lot!

Bake at 350 degrees for 15-17 minutes until a toothpick comes out with just a few crumbs. Remove cupcakes from pan immediately after taking out of the oven.

To make the Nutella icing:

In the bowl of your electric mixer fitted with the paddle attachment combine 1 cup room temperature unsalted butter with 2 cups of confectioners’ sugar. Beat for 2 minutes at medium speed. Add in 2 teaspoons of vanilla extract and 3/4 cup semisweet chocolate {melted and cooled slightly} to the butter/sugar mixture. Beat for 1 minute to combine fully. Finally add in 1/3 cup of Nutella {preferably homemade Nutella}, 1 tablespoon of milk and a pinch of salt. Beat to combine.

Ice your {cooled} cupcakes. I used a large round tip on my piping bag to get this look. Sprinkle with your favorite sprinkles or jimmies and make sure to sing “Happy Birthday” as you indulge!
