I know what you’re thinking, zucchini plus chocolate do not equal something delicious. Well, you are wrong. Oh so wrong! This combination goes together like pb&J. Although it’s more like peanut butter with jelly that you can’t taste. You see, that’s what happens. The zucchini is there {for healthy reasons of course….} but you definitely do not taste it.
This bread is soooooo good. I wish I could make one for each and every one of you. But since I can’t you need to go make it yourself! Asap. Like now, ok?
Gather the ingredients.
In the bowl of your electric mixer combine 1/2 cup of vegetable oil with 1/2 cup of whiter sugar and 1/2 cup of brown sugar.
Mix in 2 eggs and 1 1/2 cups of shredded zucchini.
Add in 1 cup of all purpose flour, 1/2 cup of cocoa powder, 1 teaspoon of baking soda, 1/4 teaspoon of baking powder, 1/4 teaspoon of salt and 1/2 a teaspoon of cinnamon. Stir until just incorporated.
Finally, mix in 3/4 cup of semisweet chocolate chips.
Place all of the batter into a greased 9 x 5 x 3 loaf pan and bake at 350 degrees for 50-60 minutes, until a toothpick inserted into the center comes out clean.
