What do you get when you combine a cocktail with a popsicle? A POPTAIL! Of course.
And what’s more patriotic than eating watermelon and drinking booze on the fourth of July? Nothing. Here’s a great want to do both. Bring these to your BBQ and I guarantee you will be the hit of the party.
Watermelon Mojito Poptail:
8 ounces watermelon juice
2 ounces fresh lime juice
1 ounce simple mint syrup
8 ounces light rum
14 ounces club soda
Place 2 1/2 cups of chopped watermelon in blender, process till juiced. Combine watermelon juice {approximately 8 ounces} with 2 ounces free lime juice, 1 ounce of simple mint syrup {see recipe below}, and 8 ounces light rum. Fill molds 3/4 of the way full with mixture. Fill remaining mold with club soda {you will use approximately 14 ounces in total}.
Freeze for two hours {until the mixture starts to solidify enough to hold a stick upright}. Insert popsicle sticks/ or whatever you stick you choose to use and finish freezing up to 5 hours, until solid.
Remove from casing and enjoy!
* Mint syrup: combine 1/2 cup water and 1/2 cup sugar in a pot over heat until sugar dissolves, cool, place in 1 cup lightly packed mint leaves and steep for 20 minutes. Strain and discard leaves. OR buy pre-made simple syrup and steep mint leaves in that! *
