Cakery Friday: Healthy Chocolate Chunk Muffins

You all know the feeling….

You spend your entire day eating uber healthy. Then, about an hour after dinner the sweet tooth kicks in. What to eat?  What to eat?

Well here’s your healthy answer: Healthy Chocolate Chunk Muffins! These muffins taste delicious and won’t cause you to ruin a day of healthy eating. Oh, and you make them by putting everything in a blender. Yup.







Gather all of the ingredients.







Place 1 3/4 cup oats, 3 egg whites, 1/2 cup unsweetened applesauce, 1 teaspoon vanilla extract, 1/2 cup plain Greek yogurt {can use fat free}, 1/2 teaspoon cream of tartar, 1 1/2 teaspoons baking powder, 1 1/2 teaspoons baking soda, 1/4 teaspoon salt, 1 cup hot water and 1 cup Turbinado sugar {or whatever sugar substitute you prefer OR 1/4 cup + 2 tablespoons Stevia} in either a blender or food processor.  Blend until oats are ground and mixture is smooth.







Place mixture in bowl and gently stir in 1/4 cup of chocolate chips. Divide batter between 12 muffin tins sprayed with nonstick spray.







Bake muffins at 350 degrees for 10 minutes. Remove muffins from oven and distribute another 1/4 cup of chocolate chips over the hot muffins. Return tin to oven and bake for another 3-5 minutes, or until a toothpick comes out clean. Allow muffins to cool. Remove from pan and enjoy!
