Cakery Friday: Mocha Chocolate Chip Meringues

I love to make meringues. They are not too difficult to make, they taste delicious AND they could fall into the semi-healthy dessert range {a stretch, I know}. Also, they are the perfect dessert to make with leftover egg whites and after all of the cakes I have made this week….. I have SO many egg whites {pictures to follow soon}!

These meringues get kicked up a notch with cocoa powder, espresso powder and chocolate chips. These were a gift to our dear friend Barbra for her birthday. I hope they helped to sweeten your day too!

Gather all of the ingredients.

In the bowl of your electric mixer, fitted with the whisk attachment, beat together 3 egg whites with 1/4 teaspoon of salt until frothy. Continue beating and gradually add in 3/4 cup of sugar and 1 teaspoon of cornstarch, one tablespoon at a time. Beat until stiff, glossy peaks form {approximately 6 minutes}.

Fold in 1 tablespoon of espresso powder and 3 tablespoons of cocoa powder, mix until just incorporated. Finally, fold in 1/2 cup of semi sweet chocolate chips.

Drop or spoon batter onto baking sheets that have been fitted with a Silpat mat or parchment paper. Bake in a 300 degree oven for 40 minutes, rotate the pans after the first 20 minutes. The cookies will be slightly cracked on the top.

    Meringue is one of my favorite too, it’s so pretty and YES, it is definitely a semi healthy cookie!
