Happy New Year! In honor of 5772, I am sharing a recipe that is very special to me. After lots of tweaks and baking, I think it’s PERFECT! The honey glaze is optional but i think it gives the cake an extra special sweet touch. This is a cake that everyone can enjoy {especially with a cup of coffee or big glass of milk}.
Gather all of the ingredients.
In the bowl of your electric mixer beat together 1 1/3 cup of vegetable oil with 3 large eggs and 2 cups of sugar until pale yellow in color.
On a piece of parchment paper, sift together 3 cups of all-purpose flour, 1 tablespoon of cinnamon, 1 teaspoon of baking soda and 1 teaspoon of salt. {i like using parchment paper to sift out my ingredients so that you can lift it up at the end and easily pour the powdery mixture into the bowl}. Add the dry ingredients into the electric mixer and beat on low speed until just combined.
Finally, add in 3-4 diced Granny Smith apples {the amount of apples is a personal preference, I like it really apple’y}.
Pour the batter into a bunt pan that as been greased.
Bake at 350 degrees for approximately 1 hour, until a toothpick inserted into the middle of the cake comes out dry. Allow to cool completely.
Glaze: Combine 2 tablespoons of warm honey with 2 tablespoons of milk and 1 cup of confectioners’ sugar. Beat until thick and creamy. You can add more milk {if it is too thick} or confectioners’ sugar {if it is too thin}. Pour over cake.
