Cakery Friday: Nutella Oatmeal Cookies

My sweet best friend suggested I try out this recipe, courtesy of her step-sister {who also has an adorable baking blog}. These cookies are the perfect blend of oatmeal, Nutella and chocolate chips. The original maker of these cookies is right when she says they are initially very crunchy but after a few hours of being stored in an airtight container they become perfectly chewy!

Gather all of the ingredients.

Preheat oven to 350 degrees.

In a bowl whisk together 1 cup of all purpose flour, 1 teaspoon baking soda and 1/4 teaspoon of salt.

In the bowl of an electric mixer  combine 1/2 cup unsalted, room temperature butter, 1/2 cup of Nutella, 1/2 cup sugar and 1/3 cup packed brown sugar. Cream together on medium-high speed for 4-5 minutes. Add in 1/2 teaspoon of vanilla extract and 1 egg. Beat to combine.

On low speed slowly add in the flour mixture. Mix until just combined. Stir in 1 cup of oats and 1 cup of chocolate chips.

Using a scoop, spoon even sized amounts of the dough onto prepared baking sheets. Bake for 12 minutes, until the cookies are lightly golden.

These cookies are DELISH! Store them in an airtight container.

    They typically yield around 2 dozen cookies using a 2t scoop! Enjoy!

    Hi Nakia, I think Heath toffee chunks would be fabulous! The cookies are light and the toffee chunks will compliment them very well.

    These sound great, but I don’t have any regular chocolate chips…All I have is some Heath toffee chunks…Do you think that would be too much in these cookies?
