Chanukah, the Jewish holiday, which celebrate the festival of lights is filled with warm and delicious foods. Since the oil burned for eight nights, it’s tradition to celebrate Chanukah with lots of foods cooked in oil.
My favorite is definitely latkes, or potato pancakes.
These fried (or baked) potato fritters are delicious no matter whether they come from the box (thanks manischewitz), or from freshly grated potatoes. Here are a few of my favorite ways to spice up your latkes this season.
This recipe from Martha mashes the potatoes in a food processor before frying them. It creates a soft latke interior with a crispy outside. Perfect for applesauce on top.

For a fancier feast, Martha offers this recipe, which grates the potatoes in long strips before frying. She suggest topping these with social cream and osetra caviar.

If you’re watching your weight this holiday season, you might want to try this recipe for pesto latkes from Eating Well. Instead of frying, latkes are baked in muffin tins with fresh basil and parmigiano-reggiano cheese for flavor.
