
Happy Hanukkah! Sundown toinght marks the first night of Hanukkah. Hanukkah celebrates the miracle of the container of oil. According to the legend, at the re-dedication of the temple, following the victory by the Maccabees, there was only enough oil to last for one day. Miraculously, the oil burned for eight days! In honor of the miracle of the oil, you are told to eat foods prepared with oil. Yup, you got it, FRIED FOOD like these doughnuts! (Who doesn’t love a holiday that tells you to eat fried foods?)

Gather all of the ingredients.
Combine 3 cups flour, 1 cup sugar, 2 teaspoons baking powder, and ½ teaspoon salt in a large mixing bowl and mix well.
Make a well in the center of the dry ingredients, add the egg mixture, and stir in one direction with a wooden spoon until the mixture forma a ball and all of the flour is incorporated. * Hold the ball in the center with a fork and rotate the dough around the bowl to pick up the flour on the edges of the bowl *
Turn the dough out on a lightly floured surface and knead 2-3 times.
Roll into a long rope, cut into 2 inch pieces and roll into balls.
Heat 3+ cups vegetable oil in a deep, heavy pot or electric fryer to 360 degrees F. The oil should be deep enough so that the doughnuts float and do not touch the bottom of the pot. Add the doughnuts, 3 to 4 at a time, turning them around in the hot oil until brown. The dough will crack ever so slightly to show they are done.
Drain on a paper towel, sprinkle with confectioners’ sugar and serve warm.
